Can I "hide" certain categories that already have enough people signed up for on the published volunteer form? For instance, many want to sign up for Crafts and Snacks but we have enough volunteers already

There is not an option to remove certain volunteer roles from the registration form without deleting it (which you do not want to do). I can pass this along to our development team to review for future improvements.
